A sure fire way to impress any guest you have over is to serve these sophisticated starters. Super simple to make and will leave a lasting impression. The great thing about these parcels is that they pair up with just about any main – making you appear like the ultimate chef!
Serves 4 (starters)
What you’ll need:
12 asparagus spears
125g mozzarella cheese, sliced into 4 pieces
8-12 slices of prosciutto
salad leaves to serve
1) Bring a pot of water to the boil and trim the asparagus spears. Throw in the asparagus and blanch for 2 minutes (no longer, you still want the crunch) and then rinse under cold water. Line up 2 asparagus spears side by side.
2) Cut each mozzarella cheese slice in half and place 2 pieces on top of the asparagus spears. Top with another spear and wrap the asparagus with the prosciutto (you’ll need about 2-3 strips each) ensuring the mozzarella is enclosed.
4) Serve each parcel with a side of salad leaves and a little extra virgin olive oil drizzled over.
